Stinging Nettle Soup

An stinging weed, the nettle is rich in minerals, calcium, iron, vitamins A and C. For the soup you need about half a shopping bag of only the younger nettle leaves and now it’s flower.

Ingredients

  • ½ bag of nettles
  • 2 medium sized potatoes, diced
  • 1 onion
  • 1 pint veg stock
  • ½ pint of soya milk
  • Knob of marg
  • 2 cloves of garlic
  • Salt and pepper

Wash the nettles in cold water still wearing your gloves. Then melt the margine in a saucepan and add the onion, garlic, nettles, and potato. Sweat them in the saucepan for about 5 minutes, once the nettles are wilted. Pour the veg stock and soya milk into the saucepan, bring to the boil then reduce the heat and simmer for about 15-20 minutes.

Blend and add your salt and pepper. Real good with homemade bread.
